Claudio and Claudia Pistocchi, brother and sister, have been working together in their Florentine laboratory for over 30 years.
We make our cakes by hand, one by one, like 30 years ago…
Without using flour, butter, or eggs, and without adding sugar.
Mixing up to seven different types of fine dark chocolates, pure cocoa powder and very little milk cream.
A large soft and creamy chocolate, perhaps enriched with fragrant fruits or aromatic spices.
We vacuum pack them to ensure they retain all their fragrance and goodness for months.
We like chocolate like this, simple, with all its characteristic notes clearly present.
A bit of our history....
It was in 1990 that the first Dark Chocolate Cake was born, in the Florentine restaurant where Claudio Pistocchi worked as Executive Chef.
A large soft and creamy chocolate, handcrafted, without the addition of sugar and without using eggs, butter or flour… only extra dark chocolate, bitter cocoa powder and a little cream, no preservatives, no additives , almost a Ganache…
We like chocolate like this, simple, with all its characteristic notes clearly present.

A few years later it took the name of TORTAPISTOCCHI® to better identify it from the first inevitable attempts at imitation.
The Cake grew little by little, making its way into the world of artisanal chocolate, until it became the phenomenon it is today.
Since 2005, Claudio and his sister Claudia, after having sold the gastronomy sector which had supported the chocolate business for 13 years, have dedicated themselves solely and exclusively to the production of this unique product in an environment not contaminated by gluten.
Innovation and continuous research have not taken anything away from the craftsmanship of the product which continues to be made manually now as then, with constantly growing quality.

We only use highly selected raw materials, from natural vanilla to dark chocolate.
No natural flavors, no preservatives, no vegetable fats other than cocoa butter.
Candied citrus fruits with only fruit and sugar, an ancient Ethiopian Arabia, very fragrant red-brown cocoa, the best national hazelnuts… and so on…
For us, saving on ingredients is pure madness, we want the best and we must also like it.
